TRIPLE CHEESY CAULIFLOWER CHEESE

Of all the cauliflower cheeses that I have ever made, this is the best. It is the cheesiest. That is probably a large part of why it was the best. I made it for my mum on mothers day and she said - and I quote - "This cauliflower cheese proper bangs, Will lad. Nice one mucker". Could be a side dish or a main with bacon bits on. Get crazy with it.

A Cauliflower
50g Salted Butter
2 Tablespoons Plain Flour
100-150ml Milk
Tablespoon English Mustard
200g Strong Cheddar Cheese
50g Stilton
Black Pepper
Parmesan (To Top With)

Instructions

  1. Preheat your oven to 200ºC. Chop your cauliflower in half. You don't need the leaves for this recipe so you can slice them off and set them aside. Pull your little florets out. I don't like to get them too big but its up to you. As long as you have an oven proof dish for it all to fit in you will be happy by the end of this. Boil these in a pan of salty water for about 6 minutes of good bubbly water boiling time. Drain and set aside.
  2. Grate your cheddar. You can use more than this or less, but remember it needs to be extra cheesy. Then we need to bash out a roux in an oven proof pan by melting butter over a low- medium heat and then whisking in our flour. This might go all horrid and weird and sticky so begin to gradually add your milk whilst whisking, until it becomes smooth. When its looking like a thick liquid - or thickuid - you can add your English mustard and stir that in. Add your cheddar in handfuls and keep it stirring until it melts. I suggest moving to using a wooden spoon here as otherwise you may end up with a clogged up whisk. When the cheddar is all mixed in you might need a splash more milk if it looks a bit thick. Crumble in your stilton and get that melted down as well. Add your cauliflower and get it all covered.
  3. Grate over a load of parmesan and give a few cracks of black pepper to the top. Slap it into the oven for about 15 minutes. Finish under the high heat of a grill for a final 5 minutes. Serve this with a roast and everyone will be very impressed and make positive comments. This would make Greg Wallace shit himself. It's that good.
