SAUSAGE, LEMON & KALE PASTA

This one is proper simple. Perfectly simple. Gorgeously simple. It could be the poster boy (or lady) for the midweek meal. It takes next to no time and it's got an abundance of flavour hidden amongst it. It also has kale in it which as we all know, is proper good for you. Proper peng midweek munch that won't make you feel super unhealthy. Yes please.

Ingredients

(To feed 4)

8-10 Good Quality Chipolata Sausages
A White Onion
3 Cloves of Garlic
Salt & Pepper
Teaspoon Chilli Flakes
2 Lemons
150ml White Wine
200g Shredded Kale
500g Dry Pasta (whatever shape you like)
Tablespoon Olive Oil
Parmesan Cheese

Teaspoon Chilli Flakes
2 Lemons
150ml White Wine
200g Shredded Kale
500g Dry Pasta (whatever shape you like)
Tablespoon Olive Oil
Parmesan Cheese

Instructions

  1. Pop a pan of heavily salted water on the hob to bring to a boil. Meanwhile slice your garlic into thin slivers, you can crush it if you want but I like thin slivers in this dish. Dice your onion finely. Squeeze out all of your sausage meat from its weird skin into a bowl and season with cracked black pepper. When the water is boiling add your dry pasta and add a splash of olive oil to a big frying pan on a medium heat.
  2. When the olive oil is hot, chuck in your sausage meat and season with a pinch of chilli flakes. When the sausage meat is looking a bit more cooked you can chuck in your diced onion. Cook that until it has softened and then add your garlic. Shimmy that all about and cook for a couple of minutes before adding your kale. Add your white wine to help wilt the kale. Cook that off for a bit.
  3. Your pasta should be ready to drain but make sure to save a mug of pasta water. Pop the pasta in with the sausage kale business. Squeeze in the juice of one or two lemons. If the lemons are small use two. If they're massive, use one and a half. Grate in a good few handfuls of parmesan and then add a few splashes of pasta water as you mix everything together. The parmesan, lemon juice and pasta water create a sort of sauce to coat the pasta.
  4. Serve in a bowl with a little more parmesan and some black pepper. Marvel at the simplicity, but also the excellence, of what you have made for yourself.
