ROASTED AUBERGINE WITH HARISSA TAHINI DRESSING

I can't lie to you. This is a real certified banger of a dish. The kind that makes me feel like I really know what I'm doing in a kitchen. Creamy, spicy dressing on a soft smokey piece of aubergine. Topped with crunchy pine nuts and creamy, salty feta. Pull the other one mate, I'm already tugging on this one.

Ingredients

(This is for one person as a main course or two people as a starter)
One big fat Aubergine
3 Tablespoons Olive Oil
Salt and Pepper
Half Teaspoon Chilli Flakes
Tablespoon Honey
2 Tablespoons Tahini
2 Tablespoons Harissa Paste
Juice of a Lemon
Handful of Fresh Parsley
2 Tablespoons Pine Nuts
As much Feta as you want
Tablespoon Pomegranate Seeds

Ingredients

One big fat Aubergine
3 Tablespoons Olive Oil
Salt and Pepper
Half Teaspoon Chilli Flakes
Tablespoon Honey
2 Tablespoons Tahini
2 Tablespoons Harissa Paste
Juice of a Lemon
Handful of Fresh Parsley
2 Tablespoons Pine Nuts
As much Feta as you want
Tablespoon Pomegranate Seeds

Instructions

  1. Firstly we want to get the oven on 180ºC. Big preheating. Get your aubergine. Slice the horrible head bit off. Then slice in half lengthways. Keep it even, you don't want one side fatter than the other. Drizzle with a couple of tablespoons of olive oil then hit it with a good whack of salt and pepper, as well as a few chilli flakes. Stick that all in an oven dish and bake for about 45 mins.
  2. Prepare your absolutely fire dank dressing by mixing together your honey, harissa paste, tahini and lemon juice in a bowl with a splash of olive oil. You want it to be runny but not TOO runny. Sort of like the consistency of chocolate sauce...almost gloopy. If it looks a bit thick you must stir in a little splash of water and you can keep doing this until it is the perfect consistency.
  3. Crumble up some feta, Finely chop some fresh parsley and stick a pan on a medium heat with your pine nuts in. They will take about a minute to toast once that pan is hot so don't burn them. You want them lightly browned. The smell is nice. Enjoy it.
  4. Pop your aubergine out of the oven. It should be nice and soft but a little bite is fine. Stick it on a plate and dress it with as much beautiful dressing as you want. Sprinkle on your feta, your parsley, your pine nuts and a few pomegranate seeds to sweeten things up.
  5. Tuck in. Admire what you have done here today. You've achieved something. Pretty healthy meal actually. Lovely stuff. Well done you.
