CUMIN & CORIANDER SIZZLING OIL NOODLES

Quite possibly some of the tastiest noodles I have ever made. No meat. Just veggies and vibes. Also shit loads of MSG.

Ingredients

(To Serve 2)

2 x 150g Packs of Noodles
1 Vegetable Stock Cube
125ml Vegetable Oil
25ml Sesame Oil
2 Cloves of Garlic
Half a Red Onion
Handful of Fresh Coriander
Tablespoon of Black and White Sesame Seeds
Teaspoon of Chilli Flakes
Teaspoon of Cumin
Teaspoon Minced Ginger Paste
2 Tablespoons Soy Sauce
Teaspoon of MSG
Tablespoon of Honey or Hot Honey
Crispy Shallots/Onions (To Serve)

125ml Vegetable Oil

Tablespoon of Black and White Sesame Seeds
Teaspoon of Chilli Flakes
Teaspoon of Cumin
Teaspoon Minced Ginger Paste
2 Tablespoons Soy Sauce
Teaspoon of MSG
Tablespoon of Honey or Hot Honey
Crispy Shallots/Onions (To Serve)

Instructions

  1. Get your noodles softening in boiling water on a low heat mixed with a dissolved veggie stock cube. They should only need a couple of minutes and will be ready in the speedy time it takes to do everything else. Add your oils to a small pan and turn up to a high heat to get it nice and hot.
  2. Peel your garlic and red onion and finely dice. Chop coriander as finely as you want. Add all your garlic and onion to a heat proof bowl with most of the coriander, saving some for garnish. Add a good load of black and white sesame seeds, chilli flakes, and your cumin. Pour over the hot oil and let it sizzle for as long as it cares to sizzle. Mix in a teaspoon of minced ginger.
  3. Drain your noodles and then mix them with the hot oil and flavoursome business. Add your MSG and honey. Hot honey is great but not essential and normal honey works just as well. Mix through a glug of soy sauce as well. Give everything a proper good mix up so the flavours are coating every inch of hot wet noodle.
  4. Serve up with sesame seeds, the remaining coriander and some crispy shallots or onions. Dig into an unctious bowl of weirdly vegan goodness.
