BANANA CRÊPES AND NUTELLA SAUCE

It's a pancake day classic. I always used to like having pretty basic pancakes with Nutella and banana on but this bad lad has extra banana in the batter and a slightly saucier take on Nutella made by getting it a little runnier. Use a non-stick pan if you prefer life to not be terribly difficult.

2 Tablespoons Plain Flour
Pinch of Salt
Half Teaspoon of Cinnamon
150ml Milk

  1. Get your banana into a bowl. Discard the peel, we're not eating that today. Save it though and follow someone who has an Instagram dedicated to zero waste recipes and eating stuff like that. Silly hippies. Smash it up with a fork. Get it as much like a paste as you can as we don't want lumpy pancakes. Add two tablespoons of flour, crack in an egg, and whisk that all together.
  2. Once you have a thick batter you can add in your pinch of salt and cinnamon and then whisk in a few millilitres of milk. Keep whisking and adding gradually until the batter is the consistency of thick-ish single cream or thick milk. Thick milk? Yeah, thick milk. Thicker than milk but not quite double cream.
  3. Get a frying pan (preferably a non-stick one) on a medium heat. Spread some butter over the bottom of the pan. When that's bubbling a bit ladle on a couple of spoonfuls of batter and tilt the pan to make sure that the batter covers the base. Each pancake should take about 40 seconds per side if the heat is right. Use a thin spatula or pallet knife to peel it off the pan at the sides of the pancake. You should be able to shimmy the pan a bit and the pancake should move. Don't be a melt, give it a proper flip. If you screw up just make more batter. Practise makes perfect.
  4. Stick your Nutella in a microwaveable bowl and add literally a tablespoonful of milk. Give this about 14 seconds in the microwave to soften and then mix together powerfully with a spoon. This is your Nutella sauce. Slice bits of banana. Pop your crêpe on a plate. Add a drizzle of choccy sauce, then banana bits. Fold the pancake on each side and then splash on a bit more sauce. Enjoy and dig in. I find it best to just tuck straight in and then go back and make another one rather than try to make them all and keep them warm, but if you want to do that just stick them in the oven on a low heat (120ºC) until you have as many as you want.
