ASPARAGUS BACON WRAP N SCREGGS

It's not a toughy, I probably don't need to write a recipe down but here we are. Just in case. This one is for you. An ideal brunch.

Ingredients

(For 2 People)

4 Asparagus Bits
2 Slices Sourdough
6 Good Quality Eggs
2 Rashers of Streaky Bacon
Salted Butter
Black Pepper
Half Teaspoon Chilli Flakes
Tablespoon Olive Oil
Half Teaspoon Garlic Powder

4 Asparagus Bits
2 Slices Sourdough
6 Good Quality Eggs
2 Rashers of Streaky Bacon
Salted Butter
Black Pepper
Half Teaspoon Chilli Flakes
Tablespoon Olive Oil
Half Teaspoon Garlic Powder

Instructions

  1. Preheat an oven to 190ºC. Snap the ends off your asparagus if they're thick and woody. You might have got them already trimmed but if not make sure to get rid of the extra thick bit. It should snap right where it needs to. Pop your asparagus bits in a bowl and season with olive oil, black pepper and garlic powder. Toss about. Wrap two pieces of asparagus around the middle, binding them with one piece of streaky bacon. Repeat and add these to a foiled tray and pop into the oven for about 20-25 minutes.
  2. Make your scrambled eggs perfectly by adding all your cracked eggs and a tablespoon of butter to a cold pan with some black pepper and chilli flakes. Heat very gently and keep stirring for about 10-15 minutes. If you like them firmer, cook for a bit longer. The key is low heat and keep them moving. Season with salt if needed.
  3. Toast your bread and spread with a little butter. Top with your screggs. Top with your bacon asparagus bizniz. Tuck in. Stinky wee.
